Chocolate Bourbon Cream


I created this recipe purely by accident. For a local event I was hosting, I had planned on serving up a batch "Holiday Meade Cream", but when I added just a little mead the flavours didn't make sense. I dug around the liquor cabinet, stumbled upon some leftover bourbon from a dessert sauce I made this summer, and now the rest is history!


This recipe uses real chocolate, cream, and a lot of other dairy. The end result is a smooth as silk chocolate drink—like you're drinking an actual chocolate bar—with a hint of bourbon.


This recipe makes about 1 liter.


RECIPE: Chocolate Bourbon Cream


INGREDIENTS


• 6 oz Chocolate, semi-sweet

• 1/2 c Whipping Cream at room temperature

• 1 can Sweetened Condensed Milk

• 1 can Evaporated Milk

• 1/2 tsp Espresso Powder

• Bourbon, to taste

• pinch of salt


METHOD


1. Place a medium pot on the stove and add about a cup of water. Place a bowl on top, creating a double boiler, then add the chocolate to the bowl. Bring the water in pot to a boil, and stir the chocolate in the bowl above it until its all melted.


2. Slowly whisk the whipping cream into the chocolate mixture over the boiling water. Keep stirring/whisking until the mixture is fluid and there are no chunks of chocolate left. Turn temperature down to low and let the chocolate mixture sit in the bowl above the warm water while you do the next step.


3. In a large bowl, pour in the sweetened condensed milk and the evaporated milk. Gradually whisk in the warm chocolate and cream mixture.


4. Whisk in the espresso powder, then add bourbon to taste/strength you desire.


5. Last, whisk in a pinch of salt.


6. Immediately pour into a bottle. Store in refrigerator until ready to use.
